How to:
Cook the pasta as normal.
Next, sauté the onion, garlic and bacon in a pan until the onions are translucent. Then add the baby spinach to the same pan until it is soft and season everything with salt and pepper.
Now stack the noodles, vegetables and cheese in a baking dish like a lasagna. It is important that the first layer consists of noodles and the last of cheese.
Put everything in the oven for about 25-30 minutes at 200C. If you don't want a crispy crust, cover it with some aluminium foil.
Serve the dish with a good portion of applesauce. Either in an extra bowl or as a sauce directly on top.
Tips:
If you're wondering why I recommend applesauce with mac'n'spinach: I don't know. Maybe it was a coincidence, but I know and love the dish just like this. Try it out!
The mac'n'spinach is best directly out of the hot oven.
