How to:
Cut the chicken into bite-sized pieces and season with a little pepper.
Then finely chop the garlic, lemongrass, chillies and ginger. Mix these in a small bowl with the fish and lime sauce and sugar.
Cut the onion into slightly larger strips and fry them with a little oil and the chicken. As soon as the onions are translucent, pour out any liquid from the pan and add the mix of fish sauce and the other ingredients.
Keep frying the chicken until the sugar caramelises.
Sprinkle a few coriander leaves and roasted peanuts on top and serve with rice.
